Ingredients

  • 810 lbs bone-in ham
  • 1 cup pure honey
  • 1 cup brown sugar (light or dark)
  • 1/4 cup Dijon mustard
  • 1 tsp ground cloves
  • 1/4 cup apple cider vinegar

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Score the surface of the ham in a diamond pattern and place it in a roasting pan, fat side up.
  3. In a bowl, combine honey, brown sugar, Dijon mustard, ground cloves, and apple cider vinegar until smooth.
  4. Brush half of the glaze over the ham; reserve the remaining glaze for later.
  5. Cover with foil and bake for 2 hours.
  6. Remove foil, brush on remaining glaze, increase temperature to 400°F (200°C), and bake uncovered for an additional 20-30 minutes until caramelized.
