Description

Ingredients

  • 1 cup short-grain sushi rice
  • 1 lb medium-sized shrimp (peeled and deveined)
  • 1 ripe avocado (sliced)
  • 1 cucumber (thinly sliced)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Sriracha
  • Salt and pepper (to taste)
  • Oil for cooking

Instructions

  1. Rinse sushi rice under cold water until clear; cook according to package instructions and allow to cool.
  2. Heat oil in a skillet over medium heat; cook seasoned shrimp for 2-3 minutes per side until pink and opaque.
  3. Mix mayonnaise and Sriracha in a bowl; adjust spice level as desired.
  4. Thinly slice cucumber and avocado for layering.
  5. Using ring molds or circular cutters, layer sushi rice, cucumber slices, shrimp, avocado slices, and drizzle sauce between layers.
  6. Carefully lift molds off stacks and serve garnished with extra Sriracha or sesame seeds.
