  • 2 medium sweet potatoes (about 1 lb), peeled and diced
  • 3 medium carrots (about 1 lb), peeled and diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Prep your ingredients by peeling and dicing sweet potatoes and carrots. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add minced garlic; stir until fragrant.
  3. Stir in sweet potatoes and carrots; sauté for about 5-7 minutes.
  4. Pour in vegetable broth until vegetables are submerged. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender.
  5. Blend the soup using an immersion blender or in batches until smooth.
  6. Return blended soup to low heat; stir in coconut milk. Season with salt and pepper to taste.
